Expect culinary excellence at Ultima Gstaad Restaurant, and from our private chefs serving in the suites and residences. Our summer menu has been curated by head chef Andrea Franceschi. He sources seasonal and naturally grown ingredients to surprise even the most loyal of diners, from lamb served with black summer truffle to thick Wagyu steaks with dollops of ponzu sauce.

Andrea Franceschi

Italian Chef, Andrea Franceschi, has an insatiable hunger for life. Over the past 20 years, he has mastered techniques in some of the most celebrated kitchens across Europe – most notably under Joël Robuchon at Le Table in Paris and Gordon Ramsey at The Connaught in London. From perfecting the French’s art for presentation to adopting Japanese methods through his travels, Franceschi, who races motorbikes in his spare time, has gained a reputation as a thrill-seeker in and outside of the kitchen.

He empowers Ultima Gstaad's private chefs, who serve within the private suites and residences, to weave in touches of personalisation to each dish that's served.

“Each Season Brings New Delights”

Chef Andrea Franceschi does not have a signature dish, yet his statement style is undeniable. Delicately curated dishes, adorned with flowers and vibrant in colour, are always delivered with a punch of flavour. From aji amarillo and seared octopus, to Simmental beef and turbot fish that melt away in your mouth, he thoughtfully combines seasonal produce with locally sourced fish and meat.

At Ultima Gstaad Restaurant, Franceschi and his team invite you to discover a new culinary experience each season. A sommelier will be there to expertly pair each meal with a bottle of wine, or whichever tipple takes your fancy. Our refined cocktail list captures the spirit of the Alps in creative and unpredictable ways.
